Ingredients
  

  • 8-10 fresh mint leaves
  • 3-4 lime wedges
  • 2 teaspoons granulated sugar or simple syrup
  • 1/4 cup fresh raspberries plus extra for garnish
  • 2 ounces white rum
  • Club soda to top
  • Edible glitter a pinch
  • Ice crushed or cubes
  • Raspberry heart garnish from halved raspberries

Instructions
 

  • Add mint leaves, lime wedges, and sugar to a sturdy glass.
  • Gently muddle with a muddler or the back of a spoon to release the mint oils and lime juice.
  • Add 1/4 cup fresh raspberries and muddle lightly to blend their flavor with the mint and lime.
  • Fill the glass with ice (crushed or cubes).
  • Add 2 ounces of white rum to the glass. Stir gently to combine.
  • Add a splash of club soda to fill the glass, leaving a little room at the top. Stir lightly to mix without losing the fizz.
  • Sprinkle a small pinch of edible glitter on top for a sparkling effect.
  • Slice a raspberry in half to create a heart shape and use it to garnish the rim or float it on top of the cocktail.
