In a small saucepan, combine 1 cup of water, 1 cup of sugar, and 1 tablespoon of dried lavender.
Heat over medium heat until the sugar dissolves, stirring occasionally.
Remove from heat and let steep for 15 minutes. Strain into a container and let cool completely.
Rub a lemon wedge around the rim of a chilled martini glass.
Dip the rim into a shallow plate of granulated sugar to coat evenly.
In a cocktail shaker, add 2 oz vodka, 1 oz lemon juice, 1 oz lavender simple syrup, and 1/2 oz triple sec.
Fill the shaker halfway with ice.
Shake vigorously for 20-30 seconds until the drink is thoroughly mixed and chilled.
Use a cocktail strainer to pour the mixture into the prepared martini glass.
Add a fresh lavender sprig or a lemon twist for garnish.
Serve immediately and enjoy!
