Ingredients
  

  • 2 oz mezcal
  • 1 oz fresh lime juice
  • 1 oz pineapple juice
  • ½ oz orange liqueur e.g., Cointreau
  • ½ oz agave syrup
  • 2-3 slices of fresh jalapeño
  • 2-3 chunks of fresh pineapple for muddling
  • Tajín or chili powder for the rim
  • Ice cubes
  • Pineapple wedge and jalapeño slice for garnish

Instructions
 

  • Run a lime wedge around the rim of a rocks glass.
  • Dip the rim in Tajín or chili powder to coat evenly.
  • In a cocktail shaker, combine 2-3 pineapple chunks and 2-3 jalapeño slices.
  • Use a muddler to crush them gently, releasing their juices and flavors.
  • Pour in 2 oz of mezcal, 1 oz of lime juice, 1 oz of pineapple juice, ½ oz of orange liqueur, and ½ oz of agave syrup.
  • Add a handful of ice cubes to the shaker.
  • Secure the lid and shake vigorously for 15-20 seconds, until the shaker feels icy cold.
  • Fill your prepared glass with fresh ice.
  • Strain the cocktail into the glass, leaving the muddled ingredients behind.
  • Add a pineapple wedge and a jalapeño slice to the rim for a decorative touch.
