Preheat a non-stick skillet or griddle over medium heat. Lightly grease with butter or cooking spray.
In a large bowl, whisk together flour, sugar, baking powder, and salt until combined.
In another bowl, whisk the egg, milk, melted butter, and vanilla extract until smooth.
Pour the wet ingredients into the dry mixture.
Stir gently until just combined. Avoid overmixing; a few lumps are fine. Add a splash of milk if the batter is too thick.
Fold in the Valentine’s sprinkles gently to avoid color bleeding.
Use a ladle or measuring cup to pour ¼ cup of batter per pancake onto the hot skillet.
Cook for 2-3 minutes until bubbles form on the surface and edges look set.
Flip carefully and cook the other side for 1-2 minutes until golden brown.
Place cooked pancakes on a baking sheet in a 200°F (93°C) oven to keep them warm while you cook the rest.
Stack pancakes on a plate and top with your favorite toppings like whipped cream, syrup, strawberries, or melted chocolate.
Sprinkle a few extra Valentine’s sprinkles for decoration.
Enjoy!
